Blackberry Cobbler

My sweet MIL sent us a box with the "southern" flour that I like to use for biscuits - you can't get it up here - the flour here is perfect for making risen breads 'though. She also sent several pints of canned blackberries that she and Papaw had picked last summer.
I used 2 pints of blackberries and a cup of sugar - and my super easy pie crust for the top.

Super Easy Pastry Crust:
1 3/4 c. flour - I used White Lily All Purpose
1/2 c. oil
3-4 tbsp. cold water

Mix oil and water together and add to flour, mix well and roll out between two sheets of wax paper.

What could be easier?...

YUM!
