Birthday Cake or Chocolate Overload

My Birthday Cakes are traditionally Chocolate Cake with Chocolate Icing - or 'Chocolate Overload' as the Man calls it - he prefers yellow cake with chocolate icing or chocolate cake with white icing - but it was my Birthday...

The Birthday Cake is just one layer of my old standy Chocolate Vinegar Cake - This recipe is perfect for our small family - it makes one 9 inch cake...

We used Kristina's Fluffy White Frosting

We just added a couple of Tablespoons of Chocolate

2 c Confectioners Sugar
2 tbl Soy Milk
1 EnerG Egg
1/3 Vegetable Shortening
2 tbl Flour
1/2 tsp Vanilla

Combine all ingredients on low speed. Once confectioners sugar is fully combined, turn to high speed, mix for 8 - 10 minutes. Frosting will become very fluffy.

This frosting was really good - I've never made frosting with Egg Substitute - Thanks Kristina...



...after blowing out the candles - topped with some lovely fresh raspberries - So GOOD...
