...another vegan gingerbread...

...it's fall...so that means bring on the gingerbread...
...I mean...gingerbread just smells like fall...
...and this was so good and quick and easy...
...I just used my trusty-tried-and-true vinegar cake recipe...with the addition of some gingerbread spices...and molasses for part of the sugar...

Depression Era Cake (a.k.a. Wacky Cake)

1 1/2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1/4 cup sugar
1/2 cup molasses - we used sorghum syrup
2 teaspoon ground ginger
2 teaspoons ground cinnamon
1/4 teaspoon ground cloves
1/4 cup oil
1 cup cold water
1/2 teaspoon vanilla
Mix all of the above ingredients then add:
2 teaspoons vinegar - stir in quickly

Makes 1 - 9" pan (round or square) - Bake at 350 until cake tests done.

    yes - cinnamon-y things smell like fall. :)

  2. Love gingerbread. When I lived in the East Midlands on 'bonfire night', old Guy Fawkes and the gunpowder plot, we had parkin which is a form of gingerbread. It had to be made a week in advance and kept to mature! Dark, sticky and divine!
