...so this week...I stepped WAY out of my comfort zone and made vegan brains...or Vegan Cervelles Braisees...which sounds a lot nicer...
...and with the veg/ham mixture it was actually pretty tasty...

...Over the Weekend...

...we had vegan pancakes for breakfast...and I stood over the griddle eating the first one...

...do y'all do that too...the first one is never quite perfect for some reason...and I usually just eat it plain while I'm cooking more perfect ones...
...and we really did get another bag of fresh okra from our gardener...

...so I cut that up...
...and froze it for the coming winter...there's nothing better than getting fresh garden veg out of the freezer in the middle of winter...
...and this happened over at the Church...
...huge mounds of mulch were delivered to our two playgrounds...
...and some of the menfolk got together and spread it all out...now our playgrounds smell wonderfully piney...and will cushion any falls our little ones have...
...and finally...this arrived anonomously on our doorstep...
...and I just LOVE it...

...Date Night...

...so...just dinner...out with the Man...and no photo of dinner...
...but the kiddos went to a Halloween party as Anthony and Cleopatra...so CUTE!...so I'll show you a photo of that...

...so the Man and I were on our own...and we hemmed and hawed about whether to stay in (as usual)...or go out...things are usually pretty crowded on Friday night you know...but the Man suggested that we just drive into our little town...park and walk up the street and see if any of the restaurants looked like they might have seating for us...

...so that's exactly what we did...and we stopped into our favorite little trattoria...and just asked...and sure enough they had a table for 2...

...sorry I didn't get a photo...but I had a delicious entrée salad called the "Autumn Harvest Salad"...with apples, cranberries, curly cabbage, roasted butternut squash and pumpkin seeds...it was perfect...

...and then because this restaurant doesn't have any vegan desserts...we walked back across the street to the ice cream parlour which always has a couple of vegan options...and got the strawberry sorbet...

...so that was pretty much a perfect impromptu date night for me...

...Friday Favorites...

...although I didn't do a What I Ate Yesterday post...I did track everything...

...y'all know...I've been vegan a long time...but people still occasionally ask me the age old question..."but...where do you get your protein?"...

...and I always try to answer truthfully that almost all foods have protein in them...and plant based foods especially so...beans of course...but...spinach and broccoli especially...and lots of seeds and nuts too...

...and of course I always try to discuss these things as kindly and gently as possible...I always want people to see how easy it is to be vegan...how much lighter...kinder...and just better they will feel...about themselves and the world...because...if there's a way you can have all the foods you love without the rape, torturing, and murdering of animals...why would you not?
...anywhoo...I've got this great new app for tracking nutrients...Cronometer...

...it's fun and easy to use...you just search for the food you want to enter...and put how much of it you ate...and it tracks all the nutrients for you...
...this is what my Cronometer looked like right after lunch...
...and this is at the end of the day...

...and that's all just from the food I ate...I do take some supplements...you can read about those on this W.I.A.Y. post...

...but I've not entered the vitamins here...so you don't have to worry about my vitamin D, E or Potassium...

...and I don't use the app every day...but it's fun to track sometimes...just to see where I'm at nutrient-wise...and I don't worry too much if I don't get enough...say selenium one day...because the next day I might get 150%...

...so we fired up the fire pit and roasted some Dandies...we totally intended to do this with Mom and Frank...but it was raining...

...I've got them beside the regular organic gala ones that I get in a 3 lb. bag...seriously about 3 times as large...

...but the amazing thing is how crisp and juicy they are...I love them...

...W.I.A.Y. ...

...I was thinking about those yummy hash browns with all the mixins that I get at breakfast cafes...
...so I grated up a potato...
...added some mushrooms...
...kale...
...tomatoes...
...and green onions...

...and cooked it all on my Foreman Grill...
Breakfast - Hash Browns with veggie mixins, tofu and toast...
...then I took the leftover mushrooms...and chopped them up...
...added some veggie broth...
...almond milk...
...and whisked in some flour to thicken it up...
...and made a yummy vegan mushroom soup...
Lunch - Vegan Mushroom Soup, saltines, tea...
Snack - Tomatoes and Cucumbers (one of my favorite snacks...store - bought tomatoes this time as the fresh from the garden ones are long gone)...
...and I didn't take a proper dinner photo...not sure why I snapped this one before my plate was 'ready'...

Dinner - Grilled Tofu, new potatoes, tomatoes, grilled peppers and onions...and a delicious tofu-ranch dressing drizzled all over everything but the tofu...

...W.I.P. Wednesday...

...not a lot going on...but I still always feel a sense of accomplishment when I complete any little job...

...Scout has a favorite pair of 'dress' pants...they're actually pretty casual...but they are soft and stretchy and comfortable and made of cotton...and he likes them...

...so we went to get another pair...and they only had 34" length...not the 32 that he needed...

...so we got them anyway...and I told him...we'd just cut them off and hem them up a little bit...
...so I laid his old pair on top of his new pair...and did just that...

...and now he has two pairs of dress pants that fit...

...Dinner and a Movie...

...well...dinner was just another one of my super-sized bowls of colourful veggies...

...tonight we have collards...Brussels sprouts...carrots...corn on the cob...broccoli...baby lima beans...and a tomato...

...the sprouts carrots and broccoli were all cooked on the Foreman grill...

...and the movie...was another episode of Endeavour...even though it wasn't my turn...it's kinda mean of me to choose a series...but there are only 4 of them...and they're each about an hour and a half long...so pretty much movie length...

...and they end with such cliff hangers that we may watch another one tomorrow night...

...Fruit and Veg Friday...

...just sharing this weeks fruit and veg haul...

...two heads of cauliflower...one for the grill and one for a Julia recipe...one bag of white new potatoes and one bag of red ones...a bunch of bananas...and two butter plus lettuce mixes...sitting on top of a box of organic baby spinach...a bag each of zucchini and cucumber...baby carrots and one of each colour of pepper...a couple of avocados...cause it's been a while since I've made guacamole...and a peach, nectarine, and plum for a smoothie...a bag of organic gala apples (regular sized)...and one of those huge Ranier organic apples...so crisp and good...a couple of limes...a mango and a tofu...

...that should last a week...

...W.I.A.Y. ...

...a big ol' smoothie for brekkie...
Breakfast - Blackberry-nectarine-kale smoothie...it was a pretty nice combination of flavors...
...one of our 'gardeners'...brought us another bag of okra...
...and he thinks he'll have at least one more before frost...so I'm hoping to put (most of) that one up in the freezer for soups and such this winter...
...but this one...got the George Foreman Grill treatment...YUM!

Lunch - Okra...and somehow I didn't manage to take a photo of my sandwich......sorry...I'm sure you can imagine a Tofu-Lettuce-and-Tomato sandwich though...
...and then we had breakfast for dinner...always one of my favorite meals...so I fried up a vegan sausage patty with some tofu...peppered and salted with kala namak for some eggy flavor...
Dinner - Brinner (Breakfast+Dinner), vegan sausage...eggs and toast...
...and for a snack...this new to me coconut yogurt...I added some blueberries (bloobs)...not my favorite...but OK...
Snack - Coconut Yogurt and Blueberries...

...OK...go ahead and inspire me with what you ate yesterday...
